Tasting Notes
Grape varietals: Sauvignon Blanc
Melon, gun flint, and fig with savoury grip and evolving mineral tension.
Winter melon, lime blossom and flint dominate the nose, followed by ripe green fig, subtle blueberry and a hint of wild herb on the palate. Fine tannin and lees texture create grip and balance, finishing long and dry with a flinty, savoury aftertaste.

Winemaking Process
Wild fermented and matured on gross lees in handmade, unlined clay amphorae.
Whole-bunch pressed, wild fermented in amphora without temperature control. Aged on gross lees for 10 months with no added sulphur until bottling. Amphorae allow micro-oxygenation, contributing texture and oxidative resilience. Bottled unfined and unfiltered for purity and authenticity.
