A sparkling Chardonnay Cap Classique, Brut NV, is fermented in bottle and matured on lees for 16 months. This méthode traditionnelle expression offers vibrant citrus notes and a refined mousse. Partial barrel fermentation adds complexity, while the absence of malolactic fermentation preserves structure and freshness. Ideal as an aperitif for a celebration or paired with seafood.

Tasting Notes

Grape varietals: Chardonnay 

Biscuity aromatics, citrus brightness, and mineral acidity merge into a sparkling wine of texture and length. 

Fresh lemon zest, grapefruit, and toasted brioche characterise the nose. A lively mousse progresses into notes of green apple, lemon cream, and crushed shells. The finish is dry, mineral, and perfectly balanced. 

Winemaking Process

Pressed whole-bunch, with partial oak fermentation before ageing in bottle for depth and finesse. 

Hand-harvested Chardonnay is gently pressed. It is fermented in stainless steel with a portion in seasoned French oak. Secondary fermentation is in bottle. It is Lees-aged for 16 months. There is no malolactic fermentation, preserving tension and elegance. The wine is disgorged and dosed to a dry style.
