Brut Rose
This salmon-hued blend of Pinot Noir and Chardonnay is made in the traditional method and aged for 16 months on lees. Its mousse is delicate, its texture creamy, and its fruit profile expresses strawberry, red cherry, and soft citrus – a structured yet playful rosé, ideal with food or on its own.
Brut
A sparkling Chardonnay Cap Classique, Brut NV, is fermented in bottle and matured on lees for 16 months. This méthode traditionnelle expression offers vibrant citrus notes and a refined mousse. Partial barrel fermentation adds complexity, while the absence of malolactic fermentation preserves structure and freshness. Ideal as an aperitif for a celebration or paired with seafood.

Winemaking Process
Gently pressed and cold fermented before traditional bottle fermentation and extended lees ageing.
Handpicked Pinot Noir and Chardonnay are lightly pressed for minimal colour. Stainless steel fermentation preserves freshness. The wine is aged 16 months on lees in bottle and disgorged with low dosage, creating an elegant, dry, and expressive experience.
