Tasting Notes

Grape varietals: Cinsault 

Sour cherry, thyme, and juicy redcurrant on a silky, mineral palate. 

The nose is perfumed with tart red fruit, crushed herbs, and a hint of violets. The palate is juicy and textural, featuring a core of sour cherry and cranberry that finishes bright and clean with a gentle grip. 

Winemaking Process

Short maceration and French oak ageing on lees for softness and lift. 

Hand-harvested and fermented over four days with daily pump-overs. Completed malolactic fermentation, then aged on lees in seasoned French oak barrels to soften tannins and enhance mouthfeel. Lightly filtered at bottling.
