The Niobe is born from one of the highest vineyards on the farm, overlooking the Estate, where the vines experience a unique sense of place and some of the most beautiful views on the farm. Hand-harvested and naturally fermented in 600L French oak, Niobe spends 14 months on its fermentation lees, developing depth, texture and complexity. Elegant yet powerful, it reflects the resilience and enduring beauty of the Niobe Protea from which it takes its name.

Tasting Notes

Grape varietal: Sauvignon Blanc

Delicate white flowers, citrus and stone fruit lead to a beautifully textured palate. Concentrated yet elegant, with subtle oak, savoury lees complexity and vibrant acidity. A wine of strength, resilience and enduring character, inspired by the Protea from which Niobe takes its name.

Winemaking Process

Hand-harvested from a single, elevated block, Niobe is crafted from fruit grown at one of our highest vineyard sites. The smaller bunches and berries are naturally concentrated, contributing to the wine’s intensity and depth. The grapes are whole-bunch pressed, with the juice settled overnight before being transferred to 600L French oak barrels, ranging from third to eighth fill.

Fermentation occurs spontaneously in the barrel, allowing the wine to develop naturally over an extended period. Niobe remains on its fermentation lees for 14 months, without bâtonnage, resulting in a wine of depth, texture and complexity, while retaining the purity and distinctive character of its vineyard origin.
